Instructions
Dressing:
  1. Make this dressing first, so as to allow the flavours to infuse.
  2. Combine minced garlic, chilli and lemongrass with honey, lime juice and fish sauce.
  3. Stir together. (Put the mix over a little bit of heat to combine if the honey isn’t infusing.)
Baked Mackerel:
  1. Pre-heat oven to moderate at 180° C.
  2. Line a baking tray with baking paper.
  3. Cover with the sliced lemons.
  4. Pop the fish on top of the lemon slices and sprinkle with the chilli.
  5. Drizzle the fish with the coconut oil.
  6. Add seasoning and put the tray in the oven for 15 minutes.
  7. Remove baked fish from oven.
  8. Serve baked mackerel with the dressing spooned over a salad.
