Bacon Cheddar Hasselback Potatoes
Instructions
  1. Preheat oven to 200°C - 400°F.
  2. Place a potato on a cutting board with wood skewers on each side, length-ways.
  3. Slice potato about 3/4 of the way through.
  4. The skewers will keep you from cutting all the way through.
  5. Cut to about 1 cm thickness.
  6. Drizzle potatoes with olive oil and place a piece butter in every few slices.
  7. Sprinkle with salt and pepper and bake for about 1 hour.
  8. The potatoes will have kind of opened up so you can stuff cheese and bacon into the slices.
  9. Pack 60 g cheese and 1/4 of your bacon into each potato.
  10. Return to oven and cook for 5 minutes until cheese is melted.
  11. Serve and enjoy!
