Instructions
Basic Bread Dough Method:
  1. In small bowl, sprinkle yeast and 1/2 teaspoon sugar over 1/2 cup warm water, stir.
  2. Let stand until foamy, about 5 minutes.
  3. In bowl of electric mixer fitted with paddle, beat remaining 1+1/4 cups warm water, egg, powdered milk, 2 tablespoons sugar, salt, and 1 cup flour.
  4. Beat until smooth and creamy, about 7 minutes.
  5. On medium-low, beat in 3+1/2 cups flour, 1/2 cup at a time, until dough comes together, it will be sticky, about 2 minutes.
  6. Add yeast mixture, beat on medium.
  7. Switch to dough hook.
  8. Gradually add butter, beat until dough is soft and sticks to fingers slightly, about 7 minutes.
  9. If dough is too wet, add 1/4 cup flour.
  10. On lightly floured surface, knead dough several turns into a ball.
  11. Coat bowl with spray, add dough smooth side up.
  12. Cover dough with sprayed plastic wrap.
  13. Let stand in warm place until doubled, about 1 hour.
Method:
  1. Preheat moderate oven to 185°C.
  2. Coat parchment-lined baking sheet with cooking spray.
  3. Roll dough into 2 cm balls, place 4 cm apart on baking sheet.
  4. Cover with plastic wrap sprayed lightly with cooking spray.
  5. Let stand in a warm place until dough doubles in bulk, 20 minutes.
  6. Brush egg wash over dough, sprinkle with poppy seeds.
  7. Bake until golden brown, 8 to 10 minutes, rotating pan halfway through.
  8. Cool buns on rack.
  9. In bowl, mix ground beef, salt, and pepper.
  10. Shape 8 g at a time into 4 cm patties.
  11. Broil or grill 1 minute per side.
  12. Shape and bake per instructions above.
  13. At serving time, preheat oven to 180°C.
  14. Slice buns in half.
  15. Layer tomato sauce, tomato, and lettuce on each bottom half.
  16. Place burgers on baking sheet, top each with a slice of cheese.
  17. Bake until cheese melts, 2 to 3 minutes.
  18. Place in buns. Serve.
