Instructions
  1. Grease and brown paper line cake tin, then place tin in freezer for a few minutes.
  2. Boil fruit, water, butter and sugar until the fruit is plump.
  3. Remove from heat.
  4. Add bicarbonate of soda and allow to cool.
  5. Mix in egg.
  6. Add sifted flours and mixed spice.
  7. Pour into prepared cake tin.
  8. Place brown paper on top of cake tin to prevent burning.
  9. Bake in a moderate oven (180°C / 350°F) for approximately 35 minutes.
