Instructions
  1. Combine all the ingredients in a saucepan.
  2. Bring to the boil and turn down to a simmer.
  3. Let it bubble away for about 15 minutes, stirring occasionally to prevent the bottom catching.
  4. Keep an eye on the syrup consistency, want it quite thin if you’re spooning the bananas over French toast, but if you’re stirring it through yoghurt then reduce it down further.
  5. As long as the bananas are soft and the spices, sugar, rum and lime have melted together into a beautiful shiny syrup, it’s going to be tremendous.
  6. Serve hot or cold on its own, spooned over cinnamon toast and stirred through yoghurt / crème fraîche, or with a scoop of ice cream. * *
