Cheesy Chicken Pot Pie Cups
Instructions
  1. Preheat oven to 200°C - 400°F.
  2. Prep chicken: For healthiest chicken, poach.
  3. Place boneless, skinless chicken breasts in a medium skillet or saucepan.
  4. Add lightly salted water, chicken or vegetable broth to cover and bring to a boil.
  5. Cover, reduce heat to low and simmer gently until the chicken is cooked through and no longer pink in the middle, 10 to 15 minutes.
  6. Cut prepared chicken into bite-size pieces.
  7. Separate biscuits and place each biscuit in a cup of a lightly greased 12-hole muffin pan.
  8. In a medium bowl, combine chicken, chicken soup, veggies, cheddar cheese, parsley flakes, and black pepper.
  9. Mix well to combine.
  10. Evenly spoon chicken mixture into prepared biscuit cups.
  11. Bake for 12 to 15 minutes or until golden brown.
  12. Remove from oven.
  13. Place muffin pan on a wire rack and let set for 2-3 minutes.
  14. Serve at once.
