Creamy Mushroom and Bacon Chicken
Instructions
  1. Dice the garlic cloves until fine and place into a small bowl.
  2. Mix the garlic, dried thyme and room temperature butter in a small bowl until well combined.
  3. Loosen the skin on the chicken breasts and push the butter mix underneath.
  4. Season both sides of the chicken with mixed spice, salt and pepper.
  5. Heat a medium sized fry pan to high heat and pour in the oil.
  6. Place the chicken breasts in skin side down.
  7. Cook for a few minutes before turning to sear the other side.
  8. Place the chicken breasts into a baking dish and into the oven at 200° C / 400° F. for about 20 minutes, until cooked through.
  9. When the chicken has 5 minutes left to cook, add the sliced mushrooms, chopped bacon, onion and garlic into the pan used earlier.
  10. Cook for 3 or 4 minutes until mushrooms are lightly browned.
  11. Then mix in the diced tomatoes.
  12. Remove the chicken from the oven and transfer to a cutting board to rest.
  13. In the pan with the mushrooms, tomatoes, bacon, onion and garlic, pour in the chicken stock, cream, soy sauce, and lemon juice.
  14. Stir and bring it to a boil, and then turn the heat to low.
  15. Let it cook until the sauce has nearly thickened and then add the cheese.
  16. Add the chicken back to the skillet and heat for another minute.
  17. Garnish with parsley.
  18. Serve with your favourite vegetables and roasted potatoes or serve over pasta with a side salad and garlic bread.
Recipe Notes

Try to make sure the breasts are thawed and at room temperature so they cook evenly.
