For Monday-itis and diet breaking… a no cook camping treat!
Crispy Chocolate Roll
In a large bowl place marshmallows, peanut butter and butter and microwave on high for 2 minutes until the marshmallows are large and puffy and the butter is melted.
You can do this step in a pot on the stove on low as well if a microwave is unavailable.
Add the cereal and stir to coat.
Spread the cereal mixture into the bottom of a large (38 x 25 cm) baking dish or pan lined with greased waxed paper or parchment.
Spread out into an even flat layer using a buttered spatula or slightly wet or buttered fingers.
Place chocolate chips and butterscotch chips in a small bowl and microwave for about 2 minutes until melted, stir until smooth.
Pour and spread over cereal layer and then roll up the cereal layer jelly-roll style starting at the short end.
Wrap and chill until set.
Slice into segments to serve.
