Aussie Dukkah Coated Steak with Salad

Aussie Dukkah Coated Steak with Salad
To make Turmeric Quinoa:
  1. Rinse 1/2 cup raw quinoa.
  2. Place in a small saucepan with 1 cup water and 1/2 teaspoon ground turmeric.
  3. Bring to the boil, cover with a lid, then reduce heat and simmer for 8 to 10 minutes or until small tails appear on the quinoa and most of the water has been absorbed.
  4. Remove from the heat and allow to stand covered for 5 minutes before fluffing with a fork.
To make Aussie Dukkah:
  1. Heat a small saucepan over a medium heat and roast the sesame seeds, sunflower seeds, almonds and pistachios until lightly golden.
  2. Combine with the coriander and sea salt and grind in a mortal and pestle or briefly blitz in a coffee grinder until light crumbs form.
To prepare the Salad:
  1. Peel and finely slice beetroot.
  2. Peel and slice carrots.
  3. Roughly chop the cauliflower florets and stalks.
  4. Peel and chop pumpkin.
  5. Roast in moderate-low oven the beetroot, carrots, cauliflower and pumpkin on a baking tray tossed with 1 tablespoon olive oil and 2 tablespoons dukkah.
  6. Slice cherry tomatoes in half.
  7. Shred red cabbage.
  8. Chop baby spinach.
To prepare the Steaks:
  1. Rub 2 teaspoons of the Aussie dukkah over each piece of steak.
  2. Barbecue the steaks using either the char grill plate or flat-plate.
  3. Alternatively, heat a large frying pan over a medium high heat and cook the steaks for 1 to 2 minutes on each side.
  4. Remove from the pan and allow to rest, before slicing into thin strips.
To make the Dressing:
  1. Combine the dressing ingredients in blender and blitz until smooth.
  2. Pour into serving jug.

  4. Serve steak and salad with feta cheese, an extra sprinkle of Aussie dukkah and your favourite herbs.
