Instructions
  1. Preheat the oven to 170°C-180°C
  2. Put the dates and water in a pan and bring to the boil for a couple of minutes.
  3. Remove the pan from the heat and set aside.
  4. Sieve the rice and tapioca flours, baking powder and mixed spice into a bowl.
  5. Add the mixed fruit and carob and stir to combine.
  6. Stir in the dates (with the water they were cooked in) and the orange juice.
  7. Mix well.
  8. Spoon into a pre-lined loaf tin, bake for 45-50 minutes, or until a skewer comes out clean.
  9. Turn out onto a wire rack and cool.
