Instructions
  1. Grab the ribs and place them on a cutting board.
  2. Take a butter knife, wedge it just underneath the membrane to loosen and pull the membrane up and off the bone.
  3. Then just use your hands to pull the rest of the membrane off.
  4. In a small bowl, combine: brown sugar, smoked paprika, chipotle chilli powder, garlic powder, cinnamon, salt and pepper.
  5. Rub the mixture all over the ribs.
  6. Place the ribs in the bowl of a crock-pot and pour the beer into the crock-pot.
  7. Cover and cook overnight or 6 to 8 hours on low.
  8. Sometime while the ribs are cooking, make the barbecue sauce.
  9. Combine all the ingredients for the barbecue sauce in a medium size sauce pot.
  10. Bring the mixture to a boil and cook until the apricots are very soft, about 10 to 15 minutes.
  11. Once the fruit is soft, remove from the heat and allow to cool slightly.
  12. Then puree the sauce in a blender until completely smooth.
  13. Pour into a glass jar.
  14. Store any leftovers in the refrigerator.
  15. Once the ribs are finish cooking and you are ready to grill them, preheat the grill to medium high heat.
  16. Remove the ribs from the crock-pot and brush them with the barbecue sauce.
  17. Be careful when handling, the ribs are they are really going to want to fall apart.
  18. This is obviously what you want, but it does make them a little tricky to handle.
  19. Place the ribs on the grill and grill for 5 to 8 minutes or until light grill marks appear.
  20. Carefully remove the ribs from the grill and onto a serving plate.
  21. Brush with more barbecue sauce and serve warm.
