Lemon Meringue Pie
Instructions
  1. Preheat oven to 180°C / 160°C fan forced.
  2. Grease a 23 cm flan tin.
  3. Combine biscuit crumbs and butter in a bowl, mixing well.
  4. Press into the base and sides of the prepared tin.
  5. Refrigerate until firm.
  6. Meanwhile, beat together sweetened condensed milk, egg yolks, lemon zest and lemon juice.
  7. Pour into prepared base.
  8. Beat egg whites until soft peaks form.
  9. Gradually beat in sugar until dissolved.
  10. Spoon meringue over filling.
  11. Bake 15-20 minutes or until golden.
  12. Serve warm or cold.
Recipe Notes

Whip in a 250 g tub of Cream Cheese with your Lemon Mixture and you have a Lemon Meringue Cheesecake!
