Instructions
  1. Cook quinoa according to directions.
  2. Meanwhile, mix: cucumber, tomato, scallions, mint, parsley, garlic, cumin, and red pepper flakes together.
  3. After quinoa has cooled, add it to salad mix.
  4. Add lemon juice and olive oil.
  5. Mix well.
  6. Salt and pepper to taste.
  7. Best if refrigerated for one hour before serving to allow flavours to build.
