Instructions
  1. Line an 18cm by 28cm slice pan with baking paper.
  2. Melt Copha in a small saucepan over low heat.
  3. Sift icing sugar into a large bowl.
  4. Add sultanas, cherries, apricots, coconut, powdered milk, lemon juice and rice bubbles.
  5. Mix together.
  6. Add melted Copha to bowl and stir until well combined.
  7. Transfer the mixture to the prepared pan.
  8. Firmly press the mixture into the pan using the back of a spoon.
  9. Tightly cover pan with plastic wrap or aluminium foil.
  10. Then refrigerate until slice is cold and set.
  11. Cut White Christmas into small squares to serve.
