Australian Chocolate Mud Cake


Super Fudge Cake
2 cups Plain Flour (300 g)
3/4 cup Hot Water (175 ml)
1+1/4 cups Unsalted Butter (250 g)
1 cup Chocolate (250 g)
1/2 cup Milk (125 ml)
1/2 cup Cocoa Powder (55 g)
4 large Eggs
2+3/4 cups Granulated Sugar (550 g)
2 tablespoons Instant Coffee (30 ml)
2 tablespoons Vegetable Oil (30 ml)
1/2 teaspoon Baking Soda (2.5 ml)
2 teaspoons Baking Powder (10 ml)
1 teaspoon Salt (5 ml)

Baking dish = 20 cm x 9 cm (8” x 3+1/2”)
Oven Temperature = 150°C. (300°F.)

Melt chocolate, butter, sugar and instant coffee dissolved in hot water in double boiler (about 5 minutes)
Remove from heat
Add milk and mix
Add eggs while mixing
Add vegetable oil
Sift in flour, baking soda, baking powder, salt, cocoa powder into mixture and gently combine
Pour batter into baking paper lined baking dish
Place in oven for 2 hours
Remove from oven and allow to cool before removing from pan.
