Chocolate Volcano Cakes


Chocolate Lava Cakes

180 g Dark Chocolate
2+1/2 tablespoons Flour
2 medium Eggs and 1 Yolk
1 pinch of Salt
1+1/2 tablespoons Cocoa Powder plus 1 tablespoon for the cake tins.
5+1/2 tablespoons Butter plus butter for the cake tins
2/3 cup Icing Sugar plus 1 tablespoon for decoration
Half a Vanilla Pod
* 4 individual cake tins

How to make:
First of all chop your chocolate and melt it in a Bain Marie (double boiler) or in the microwave.
Once it is melted, add the butter cut into cubes.
Melt everything together and then take it off the heat and let it cool.
While the chocolate is cooling, in a mixer place the eggs which must be at room temperature.
Now add the sifted icing sugar and the scraped vanilla pod seeds.
Add the sugar and then turn on the mixer for about 10 minutes or until the mix is light and foamy.
Now, put the mixer on low speed and add the cooled chocolate mixture.
Simply add the cocoa powder sifted together with the flour and a pinch of salt.
Mix it all together with a spatula.
Once it’s completely mixed with no lumps, we’re ready to fill the individual tins.
With the cake batter ready, butter the cake tins and coat the butter with the cocoa powder.
Divide the batter between the 4 tins and then bake at 180°C.(350°F.) for 13 to 15 minutes maximum.
Don’t let it cook for even one more minute
or else the centre won’t be liquid, but will have cooked through.
Once they are out of the oven, let the cakes rest for a few minutes
before turning them out onto a dessert plate.
Dust with icing sugar, and they’re ready to be tasted.
