Ingredients
- 1 cup Self Raising Flour
- 1/2 cup Milk
- 2 Eggs
- 420 g Corn Kernels (1 can)
- 310 g Cream Corn (1 can)
- 1/2 cup Cheddar Cheese grated
- 2 tablespoons Chives chopped
- 2 tablespoons Butter
- 4 strips smokey Bacon
For Guacamole:
- 2 or 3 Avocados peeled, stone removed and chopped
- 1 small bunch green Shallots finely sliced
- 1 small bunch Parsley finely chopped
- 1 Tomato chopped
- 1 clove minced Garlic
- Juice of one Lime, one Lemon or both
- Salt and Pepper to taste

Instructions
- In a mixing bowl, lightly beat eggs and whisk in milk and butter.
- Add the flour, cheese, chives and both cans of cream corn and corn kernels to the bowl, season and stir.
- Heat up your Deep Fry pan on a medium setting and add in dollops of the corn fritter batter.
- Carefully flip the fritters when they start to bubble on the top.
- Once the fritters are cooked to desired colour and cheese has melted, remove from pan.
- Add some lashings of bacon to compliment your corn fritters.
- Cook to desired tenderness.
- Serve with guacamole sprinkled with shallots and decorated with your favourite sauce.
Guacamole:
- Combine ingredients in a medium size bowl.
- Chill for half an hour to blend flavours.
