Ingredients
- 3 whole Mackerel
- 1 Lemon sliced
- 1 long red Chilli sliced
- 1 tablespoon Coconut Oil
- 1 pinch Sea Salt
- 1 pinch black Pepper
For Asian Dressing:
- 1 clove Garlic finely chopped
- 1 small red Chilli finely chopped
- 1 Lemongrass just pale part, finely chopped
- 1 Lime juiced
- 1 tablespoon Honey
- 1 tablespoon Fish Sauce
Combine for a salad:
- 1 punnet Cherry Tomatoes halved
- 1/2 bunch Mint ripped
- 1/2 bunch Basil ripped
- 2 Zucchini cut into ribbons

Instructions
Dressing:
- Make this dressing first, so as to allow the flavours to infuse.
- Combine minced garlic, chilli and lemongrass with honey, lime juice and fish sauce.
- Stir together. (Put the mix over a little bit of heat to combine if the honey isn’t infusing.)
Baked Mackerel:
- Pre-heat oven to moderate at 180° C.
- Line a baking tray with baking paper.
- Cover with the sliced lemons.
- Pop the fish on top of the lemon slices and sprinkle with the chilli.
- Drizzle the fish with the coconut oil.
- Add seasoning and put the tray in the oven for 15 minutes.
- Remove baked fish from oven.
- Serve baked mackerel with the dressing spooned over a salad.
