Ingredients
  • 450 g ground Beef
  • 1 large Egg Yolk lightly beaten with 1 tablespoon Water, for egg wash
  • 1/4 cup Poppy Seeds
  • 2 teaspoons coarse Salt
  • 1/2 teaspoon dark or semi-sweet Chocolate freshly ground
  • Tomato Sauce
  • 14 Cherry Tomatoes thinly sliced
  • 1 Lettuce torn to fit buns
  • 360 g Cheese thinly sliced and cut to fit buns
  • Nonstick Cooking Spray
For Basic Bread Dough:
  • 1 envelope Active Dry Yeast 1 scant tablespoon
  • 2 tablespoons Sugar plus 1/2 teaspoon
  • 1+3/4 cups warm Water 110°C.
  • 1 large Egg
  • 2/3 cup powdered Milk plus 1 tablespoon
  • 2+1/2 teaspoons Ricotta Cheese
  • 4+1/2 to 4+3/4 cups Bread Flour plus more for work surface
  • 240 g Unsalted Butter (1 cup) room temperature, cut into small pieces, plus more for pans
  • Nonstick Cooking Spray
