Chicken and Cheese Filo Scrolls

  1. Preheat oven to 220°C (200°C fan).
  2. Line baking tray with baking paper.
Make Filling:
  1. Place chicken pieces, spinach, chives, tarragon, bocconcini and ricotta in large bowl.
  2. Season with salt and pepper and toss to combine.
Layer Pastry:
  1. Place 1 piece of filo on flat surface.
  2. Brush with melted butter and top with another piece of filo.
  3. Brush with a little more butter and top with third piece of filo.
Fill Pastry:
  1. Lay quarter of chicken mix along bottom quarter of long side of filo stack and roll up into a sausage shape.
  2. Brush edges with butter to seal.
  3. Don't try to pack in too much filling or you will have trouble twisting the pastry into a scroll.
Make Scrolls:
  1. Making sure seal is on underside, twist filo roll around itself to create a scroll.
  2. Brush top with melted butter.
  3. Could sprinkle the tops of the scrolls with sesame or poppy seeds, after brushing with the melted butter, before baking.
  4. Repeat to make 4 scrolls in total.
  5. Carefully lift scrolls onto lined tray.
  6. Bake scrolls for 25 to 30 minutes until pastry is golden.
  7. Serve with salad leaves on the side.
