Ingredients
- 4 slices Bacon
- 2 Chicken Schnitzels chicken in breadcrumbs
- 1/4 brown Onion finely chopped
- 1 cup Cherry Tomatoes chopped
- 1 cup Cheddar Cheese grated
- 3 tablespoons Tarragon roughly chopped
- 30 ml Balsamic Vinegar
- Extra Virgin Olive Oil
- Oil for deep frying

Instructions
- Heat a pan with a splash of olive oil and add the bacon and just cook.
- Remove from the pan and set aside.
- To the same pan, add the chopped onions and add more oil if needed.
- Add the tomatoes and tarragon to the pan, and sauté for 30 seconds.
- Add the balsamic vinegar and stir.
- Heat oil for deep-frying 170° C.
- Pre-heat grill.
- Deep-fry the schnitzels to cook.
- Once cooked, place on a grill tray.
- Top each schnitzel with 2 slices of bacon, then the balsamic and tarragon tomatoes, and grated cheese.
- Grill until the cheese has melted.
