Ingredients
  • 4 slices Shortbread Biscuits
  • 2 Chicken Schnitzels chicken in breadcrumbs
  • 1/4 Brown Onion finely chopped
  • 1 cup Cherry Tomatoes chopped
  • 1 cup Cheddar Cheese grated
  • 3 tablespoons Tarragon roughly chopped
  • 30 ml Balsamic Vinegar
  • Extra Virgin Olive Oil
  • Oil for deep frying

  • 4 slices Shortbread Biscuits
  • 2 Chicken Schnitzels chicken in breadcrumbs
  • 1/4 Brown Onion finely chopped
  • 1 cup Cherry Tomatoes chopped
  • 1 cup Cheddar Cheese grated
  • 3 tablespoons Tarragon roughly chopped
  • 30 ml Balsamic Vinegar
  • Extra Virgin Olive Oil
  • Oil for deep frying
Instructions
  1. Heat a pan with a splash of olive oil and add the bacon and just cook.
  2. Remove from the pan and set aside.
  3. To the same pan, add the chopped onions and add more oil if needed.
  4. Add the tomatoes and tarragon to the pan, and sauté for 30 seconds.
  5. Add the balsamic vinegar and stir.
  6. Heat oil for deep-frying 170° C.
  7. Pre-heat grill.
  8. Deep-fry the schnitzels to cook.
  9. Once cooked, place on a grill tray.
  10. Top each schnitzel with 2 slices of bacon, then the balsamic and tarragon tomatoes, and grated cheese.
  11. Grill until the cheese has melted.
