Mexican Pulled Pork

Ingredients
  • 1.5 kg Boneless Pork Shoulder rind removed
  • 2 tablespoons Vegetable Oil
  • 1 Leek sliced
  • 410 g can Chopped Tomatoes
  • 2 tablespoons Apple Cider Vinegar
  • 6 Taco shells Baked as per packet instructions.
For the rub:
  • 2 tablespoons Chilli Powder
  • 1/2 tablespoon Salt Flakes
  • 1/2 tablespoon Brown Sugar
  • 1 teaspoon Ground Cumin
  • 1/2 teaspoon Cayenne
  • 1/2 teaspoon Turmeric
  • 1/2 teaspoon Ground Oregano
  • 1/2 teaspoon Onion powder
  • 1/2 teaspoon Garlic powder
  • 1/2 teaspoon Cinnamon
  • 1/4 teaspoon Ground Cloves

Instructions
  1. Mix the rub ingredients in a bowl until well blended.
  2. Rub pork with the spice mix.
  3. Pour oil into the pressure cooker pan.
  4. Select BROWN menu.
  5. Brown pork well on all sides.
  6. Add sliced leek, cook for 2 minutes.
  7. Add chopped tomatoes and cider vinegar.
  8. Cook on high pressure for 2 hours.
  9. When cooking is finished, remove pork and shred.
  10. Serve with sauce from the pan and tasty vegetables in taco shells.
