One Pan Pasta
Spaghetti wrapped in a silky Tomato Sauce

Ingredients
  • 200 g Spaghetti
  • 200 g Cherry Tomatoes sliced in half
  • 100 g Baby Spinach Leaves
  • 1 Onion finely sliced
  • 3 cloves Garlic finely sliced
  • 1 Red Chilli finely chopped
  • 1 handful Basil Leaves roughly chopped
  • 2 tablespoons Extra Virgin Olive Oil
  • 50 g Pecorino Cheese grated
  • Sea Salt and ground Black Pepper
  • 600 ml Water or Chicken Stock

  • 1 One large base frying pan

  • 200 g Spaghetti

  • 2 tablespoons Extra Virgin Olive Oil
  • 50 g Pecorino Cheese grated
  • Sea Salt and ground Black Pepper
  • 600 ml Water or Chicken Stock
Need:
  • 1 One large base frying pan
Instructions
  1. Arrange the tomatoes, spinach, onion, garlic, and chilli across the base of a large frying pan.
  2. Nestle the spaghetti in the centre of the pan and pour over the olive oil and the 600 ml water or chicken stock.
  3. Place the pan over a medium-high heat and bring the contents of the pan to the boil.
  4. Using tongs, stir the pasta regularly and cook for about 10 minutes until it is cooked and the liquid has nearly evaporated creating a sauce.
  5. Remove the pan from heat and stir through the pecorino cheese and basil.
  6. Season with sea salt and ground black pepper to serve.
