Ingredients
  • 400 g Beef Strips
  • 1 red Onion finely sliced
  • 2 teaspoons Ground Cumin
  • 2 teaspoons Ground Coriander
  • 1/4 teaspoon Paprika optional
  • 1 teaspoon Lime Juice
  • 2 tablespoons Canola Oil
  • 150 g Red Capsicum cut into strips
  • 150 g Green Capsicum cut into strips
  • Salt
  • Cracked Black Pepper
  • 8 Flour Tortillas
  • Sour Cream to serve
For salad extras:
  • Cos Lettuce Leaves
  • Tomato chopped
  • Coriander leaves

  • 400 g Beef Strips

  • 150 g Green Capsicum cut into strips

Instructions
  1. Place the beef strips in a large bowl and add the spices, lime juice, oil , salt and pepper.
  2. Toss to coat and set aside for 20 to 30 minutes.
  3. Heat a stove top grill over high heat.
  4. Brush with some extra oil and cook the meat in batches until well browned and slightly charred.
  5. Remove from heat and keep warm.
  6. Add the onion and capsicum to the grill.
  7. Sauté the vegetables until golden brown and tender.
  8. Add the beef back to the grill and toss to combine with the vegetables.
  9. Warm the tortillas through, and then serve topped with salad extras, steak mixture, and a dollop of sour cream.
Recipe Notes

* This dish also works well with chicken and seafood such as prawns and firm white fish.
