Skillet Sweet Potato Breakfast Hash
  1. Pre-heat oven to 180° C / 350° F.
  2. Cook your bacon in your cast iron skillet, or any heavy skillet and cook until browned.
  3. Remove from pan and place on paper towel.
  4. Remove or drain most of the bacon grease.
  5. Keep a little for the flavour.
  6. Add garlic and onions and sauté until onions are translucent and caramelised.
  7. Peel and chop sweet potato into 2 cm cubes.
  8. Toss with olive oil and season with salt and pepper.
  9. Add to skillet and cook until tender.
  10. Chop apple into 2 cm cubes.
  11. In the skillet with the sweet potatoes and onions, add bacon and apple.
  12. Chop kale into bite sized pieces and right before you place your skillet into the oven, add to skillet and mix well.
  13. Season your hash with salt, pepper, cumin, thyme.
  14. Divide your hash into your personal sized cast iron skillets, or keep in this same pan.
  15. Create a shallow hole and crack an egg in it.
  16. Place in the oven and cook for 8 to 10 minutes or until whites are cooked through.
  17. Sprinkle with cheese and serve.
